After all, Breakfast is the most important meal of the day!
Here is the recipe for those of you that want to have your own short stack:
1 3/4 cup unbleached all purpose or whole wheat flour
1/4 cup yellow cornmeal
1 teaspoon baking soda
2 teaspoons baking powder
2 cups buttermilk
1/2 cup milk, skim or whole
2 large eggs
2 tablespoons vegetable oil
2 eggshells, crushed or ground (optional)
Combine flour, cornmeal, baking soda and powder.
Combine remaining ingredients in another bowl. Mix wet and dry ingredients until combined (careful not to overmix) and cook as you would regular pancakes. Cool to room temperature. Enjoy!
**batter lasts in refrigerator for about 2 days**
